Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 24 ounces thick pasta sauce
  • 14.5 ounces diced tomatoes
  • 20 ounces frozen cheese tortellini
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper

  • Two forks for shredding

Method
 

Step 1. Build the Sauce
  1. Add pasta sauce, diced tomatoes, Italian seasoning, and black pepper to the slow cooker. Stir to combine.
Step 2. Add the Chicken
  1. Place chicken breasts into the sauce and turn to coat.
Step 3. Slow Cook
  1. Cover and cook on High for approximately 3 to 4 hours or Low for approximately 5 to 6 hours, until the chicken reaches 165°F (74°C) and is tender.
Step 4. Shred the Chicken
  1. Remove the chicken, shred it with two forks, and return it to the slow cooker.
Step 5. Add Tortellini and Parmesan
  1. Stir in the frozen tortellini and Parmesan cheese.
Step 6. Add Mozzarella
  1. Top with mozzarella, cover, and continue cooking until the tortellini is tender and the cheese has melted.
Step 7. Serve
  1. Gently stir and serve warm with your favorite side.

Notes

  • Frozen tortellini is recommended for this slow cooker preparation.
  • Add tortellini during the final cooking stage to help prevent overcooking.
  • Use a thick pasta sauce for a better final consistency.
  • Verify that the chicken reaches 165°F (74°C).
