Slow Cooker Chicken Broccoli Tortellini

A creamy slow cooker dinner featuring tender chicken, cheesy tortellini, broccoli, Alfredo sauce, cream cheese, and Parmesan. The chicken cooks first, while the tortellini and broccoli are added near the end for a better texture.

Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 2 cups prepared Alfredo sauce
  • 8 ounces cream cheese cubed
  • 1/2 cup finely grated Parmesan cheese
  • 20 ounces cheese tortellini
  • 3 cups broccoli florets
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste

Method
 

Step 1. Season the Chicken
  1. Place chicken breasts in the slow cooker and season with garlic powder, Italian seasoning, salt, and black pepper.
Step 2. Add the Sauce
  1. Pour Alfredo sauce over the chicken. Add cubed cream cheese and Parmesan.
Step 3. Cook the Chicken
  1. Cover and cook until the chicken reaches an internal temperature of 165°F (74°C) and is tender enough to shred.
Step 4. Shred the Chicken
  1. Remove the chicken, shred it with two forks, and return it to the slow cooker.
Step 5. Add Tortellini and Broccoli
  1. Stir in the tortellini and broccoli. Cover and continue cooking until the tortellini is tender and the broccoli is cooked to your preferred texture.
Step 6. Serve
  1. Stir gently, taste for seasoning, and serve warm.

Notes

  • Tortellini cooking time varies by brand and whether it is fresh, refrigerated, or frozen.
  • Add tortellini during the final stage rather than at the beginning.
  • Use an instant-read thermometer to confirm that the chicken reaches 165°F (74°C).
    Leftovers can be refrigerated for 3 to 4 days.
  • Add a small splash of milk or broth when reheating if the sauce becomes too thick.
